Mama's Pasta Salad

Now that it's warm outside, I'm craving summer time foods! One of my favorite dishes is my Mom's incredible pasta salad. It only takes a few ingredients & a few minutes.


What you'll need:
1 lb rotelle noodles (spirals)
20-30 pepperonis
2 mini cans sliced black olives
1 large cucumber
20 cherry tomatoes
1/2 C red wine vinegar
1/2 C olive oil

Boil water & cook noodles to your liking. In the meantime, peel the cucumber, then cut into thin slices, then cut them into fourths. Cut the pepperoni into fourths & slice the tomatoes in half.






When the noodles are soft, drain them & run them under cold water until the noodles are cold (use your hands to mix the noodles & make sure they're cool). Put the olives, pepperoni, tomatoes, cucumber & pasta into a large bowl with a lid. Pour on the olive oil & vinegar. Seal the container, then give it a good shake.

This will be the outcome...





For the best results, chill for at least an hour, but if you can't wait, go ahead & dig in!
